· How did you learn to cook?
My first cooking teacher was my mom. I mostly started cooking in university with my friend, who was a cooking chef. But now that I live in Portugal, especially with the meat and fruits this country has, I’ve been able to prepare some dishes. When lockdown begun, I started cooking more.
· What do you love the most about cooking?
I think it’s a very creative activity. Sometimes you can mix unusual ingredients together. It’s also satisfying to make your own dish.
· What is your favourite dish?
Brazilian Moqueca, I have been trying to recreate it and I’ve made something that tasted close to the ones I’ve had in São Paulo, Brazil.
· Are there any recipes you want to share for the newspaper article?
Yes,
Tray Bakes are the easiest recipes, because they take very little preparation, and you can tailor them to whatever flavours you prefer. To get as many vitamins and minerals into it as you can, choose ONE vegetable from each colour:

Purple: sweet potatoes, beets, purple onions
Red: Tomatoes, red peppers
Orange: Carrots, pumpkin
Yellow: Squash, yellow peppers
Green: Broccoli, couve, Brussels sprouts, green peppers
White: Cauliflower, onions
Cut them up whatever size you prefer, and line them up together by colour on a large pan. If you want larger sized pieces, you may need to add more cooking time.
Sprinkle with olive oil and whatever spices you like. For example:
Paprika, Sweet pepper powder, garlic powder, salt
Oregano, Basil, garlic powder, salt
Or brush on peanut oil or oyster sauce, and add 5 Spice to give it an Asian flavour.
Add meat or fish if you want, such as chicken breasts or pork chops or salmon. Cover with the same spices. Bake for 35 minutes at 200ºC.

· How did you learn to cook?
To be honest with you, I never wanted to learn how to cook when I was about your age, I thought we would know it automatically once we grew up, apparently that’s not the case. But(there is a BUT), I did enjoy doing whatever my mum asked me to do in the kitchen while she was preparing for the dinner every day. She always recognized how clean and precious my cutting skill was and I just felt so significant and so happy by my mum’s recognition.
Only many years later, when I moved to Portugal, I started to learn how to cook from Portuguese food magazines(yes, at that time, the internet was more for sending and receiving emails. How ancient, right?). Now, I cook on most of the days for my family and they think my food is alright.
· What do you love the most about cooking?
Maybe the preparation part. I find strangely it calms me down a bit. It makes me stay focused just on the food ingredients instead of thousands of thoughts going though my mind.
· What is your favourite dish?
Dishes with noodles, pasta or spaghetti.
· Are there any recipes you want to share for the newspaper article?
Yes, I would like to share with you a no-fail recipe of Chinese scallion pancake (Cong You Bing )
It only needs 5 ingredients in total and is simple to make and delicious to eat.
